WINE STORAGE AFTER OPENING

From the moment you open the bottle, the clock is ticking, and your wine begins to lose its aroma and character of flavour. Wine will react when exposed to light and heat.
Oxygen turns alcohol into vinegar. So, when considering how to store wine, it is important that you ensure that your wine is protected from exposure to air as much as possible. A good start is to remember to cap the bottle after each pour. But this is also not enough.

1. Store opened bottles of wine in an upright position
Once opened, all wine bottles (whether screw caps or corkscrews) should be stored in an upright position to reduce surface area exposed to oxygen.

2. Keep your wine in the fridge
You should store wine after opening the lid in the refrigerator. Cooler temperatures slow down chemical processes, including oxidation. A capped bottle of red or white wine in the refrigerator can stay relatively fresh for up to 5 days. The use of cold wine is also a way to add delicious wine.

3. Use of wine storage system
If you don’t mind paying, a professional wine storage system can help you keep your wine fresh longer.
The vacuum pump sucks air out of the opened bottle so it can be discreetly re-sealed without oxygen affecting the wine. This is an affordable option commonly used in restaurants and bars.
– A better option is to use an inert gas, a gas that does not react with alcohol. Argon inert gas or other gas mixtures work by displacing oxygen in the bottle and creating a protective layer on the surface. Argon is non-reactive and denser than oxygen, it forms a plate and protects the alcohol from exposure to air and therefore from oxidizing. After the gas is ejected, place the cork back as tightly as possible and refrigerate in the upward position.

4. Alcohol Shield
Here’s another way to preserve a bottle of wine you haven’t finished yet. The wine shield is a round, flexible disc placed in a partially intoxicated bottle of wine. This floating cap keeps the wine fresh and strong for several days. The plastic disc is made with some air bubbles so that it floats on the surface of the wine. It does not plug the neck of the bottle, but instead moves with it when the bottle is in an upright position. This is a great option for home drinkers who don’t consume the entire bottle in one go. It’s also perfect for bars and restaurants that sell wine by the glass.

5. Take advantage of smaller bottles


If you don’t want to invest in an expensive wine storage system, you might consider decanting your leftovers into smaller bottles and storing them in the fridge under screw caps. The air in the small bottle has less room so it is less exposed to oxygen, so preserving the wine is also a lot easier.
